What’s Needed
The ingredients to make delicious Pizzettes:
- ¾ cup of raw almonds
- 1½ cups of flour
- one teaspoon of baking powder
- ½ teaspoon of salt
- One stick of unsalted butter
- ¾ teaspoon of cinnamon
- ½ teaspoon of nutmeg
- ½ teaspoon of ground cloves
- ½ cup of granulated sugar
- ¼ cup of cocoa powder
- 1 large egg and one egg yolk
- 4 ounces of bittersweet chocolate chips
- A tablespoon each of lemon zest and orange zest
For the glaze, prepare the following:
- 2 teaspoons of unsalted butter
- 2 ounces of bittersweet chocolate
- A pinch of salt
- ⅔ cup of powdered sugar

Preparing the Pizzettes
The first step is to preheat the oven to 350 degrees and set the oven racks on the upper and lower thirds of the oven. The almonds are then baked on a baking sheet for 7-10 minutes until they become fragrant and get a slightly darker color. The almonds should be set aside to cool and then finely chopped. When the almonds are removed from the oven, the temperature is increased to 375.
The flour, baking powder, and salt are combined in a medium bowl and set aside. Meanwhile, the butter is melted in a saucepan and the cinnamon, cloves, and nutmeg are added. Once this is removed from the heat and left to sit for 5 minutes, it’s time to whisk the sugar and cocoa in a large bowl. Add and mix the melted butter, followed by the eggs. Then, it’s time to whisk in the dry ingredients, chocolate chips, almonds, orange, and lemon zest.
Split the dough in two and roll out into two 2”-wide logs and slice 1” cookies diagonally. Bake the cookies for 8-10 minutes until firm and let them cool. Make a glaze of melted chocolate, powdered sugar, and two tablespoons of boiling water, then glaze the cookies individually.
