This cheese dip takes nachos to the next level. It’s made with real ingredients and is way more flavorful than what you may be used to. Guy suggests that when you make the super melty cheese dip, you don’t have to rush it. A little roux with some butter and flour, as well as a bit of milk, and voila – you have an excellent base. Start stirring the shredded or crumbled cheese slowly at a low-to-medium temperature. A little provolone, gouda, a little cheddar, a little parm – it’s a mix that you have to keep warm in a double boiler.

With that, you set out to make your own super melty cheese dip, which, as you will discover, tastes fantastic on everything. You can dip chips in it, straight from the pot, if you want. Add roasted tomatoes, green chiles, jalapenos, or cilantro, and there you have it – spicier queso. Drench your broccoli to make it less “vegetable-y.” You can also dip fries in it when you’re feeling crazy, or even better – toss cooked elbows or shells in it and serve it as a mac and cheese.
